Apple seeds and the pits of stone fruits like cherries, peaches and plums contain amygdalin, a cyanogenic compound. Swallowed whole, the seed's hard coating acts as a barrier, but chewing or crushing it releases the compound, which digestive enzymes convert into hydrogen cyanide. Apple seeds are smaller and less concentrated, but a large enough amount of cherry, peach or plum pits can be fatal.
